Well, just going around bounty hunting the entire time doesn't sound like much of a story, does it? The rescue plot serves to give Django and Shultz more depth (something all QT characters tend to be in dire need of.)
For the first 20 minutes I was worried that Waltz's character was going to be a carbon copy (albeit an entertaining one) of Landa from Basterds, but he turns into something quite different and more complicated.
And, my god, the balls QT has to so closely meld comedy and sorrow. The greatest example: [spoiler]Django watches his wife get pulled out of the hot box and dragged across the yard, nude and without dignity. As Django is staring, presumably filled with an amplified version of the negative emotion that the audience feels, Sam Jackson's character makes a smartass comment to the effect of: "you gonna sleep in the box or come upstairs?"[/spoiler]
The laughter provides a welcome release from each harrowing moment. The movie might be unwatchable without it. I felt no guilt laughing at each 'nigga on a nag' joke, even with a Ving Rhames-esque black dude sitting next to me in the theater. (Although, to be fair, his laughter probably provided a good amount of cover for my own.)
